Artichoke Pasta Salad
This recipe uses fresh artichokes and a light flavorful dressing. Whole grain pasta and artichokes combine to make this salad a wholesome hearty meal.
To make this recipe, you will need about 4-5 fresh artichokes that have been cleaned and trimmed down to the hearts and finely diced. In a large skillet, take about 2-3 tablespoons of olive oil. To this add some crushed garlic, chopped green onions, salt, pepper and the diced artichokes. Sauté this mixture for about 10 minutes till the artichokes are lightly done.
In the meanwhile, boil whole grain pasta in a large cooking vessel. Add some salt and olive oil while boiling the pasta. Once the pasta is cooked, drain the water and allow the pasta to cool.
Finally combine the pasta and the prepared artichoke mix. For enhanced flavor add fresh lemon juice and a little honey mustard sauce to this pasta salad. Serve this salad with warm garlic bread.
Baby Artichokes with Lemon Dressing
Baby artichokes combine with a flavorful lemon dressing to make a delicious appetizer.To make this recipe, first clean about 10-12 baby artichokes. Remove the outer leaves till you are able to see the fresh inner leaves of the artichoke. Blanch these artichokes in salted water and keep aside.
In a sauce pan, take some olive oil and sauté some crushed garlic in it. Now, add the blanched artichokes to the sautéed garlic and stir-fry for 2-3 minutes.Remove the artichokes from the flame and add some lemon juice, paprika powder, and dried herbs. Serve hot with a cheesy dip.
