Capsicum With Curd
This is a recipe with a difference. It can also be presented well. It is quick and easy to make and also nutritious to eat.
For this recipe you will need five to six large capsicums. Cut the capsicum in to strips. Boil and peel eight to ten potatoes. When cool cut them in to small cubes. Keep them aside. Heat oil in a heavy bottom pan and add two bay leaves, quarter teaspoon of cumin seeds and quarter teaspoon of mustard seeds. Cook for a minute and add the potatoes and one slit green chili. Cover and cook for ten minutes. Now ad some red chili powder and turmeric powder.
Add the capsicum and cook till it is tender; add a bit of water. Once the water dries beat one cup of curd using a fork and add to the pan. Cook again till it dries up. This will take about five minutes. Remove from gas and keep aside. For serving take two capsicums and cut off the tops. Make the capsicum stand. It will resemble a bowl. Add the potato stuffing in to it and bake in the oven for ten minutes at one hundred and sixty degrees Celsius. You can sprinkle some grated cheese over it. Serve hot. This can be eaten plain as it is like a bake.
Each person will wake one capsicum and will need to scoop out the stuffing with a spoon to eat it. This is a very different and innovative way of serving this dish. Even the kids will enjoy eating it and will be fascinated by the way it is served. If you are planning on calling guests over this is an ideal dish to make and serve as it can be prepared in advance and baked just before serving. The guests will like how you have served it. You can serve it as a snack or as a main course. It suits both purposes.
If it is left over you can keep it for the next day but add some more curd as it will dry up. Do try this delicious and healthy recipe.
