Chicken in Potatoes
In this recipe you will stuff minced chicken in potatoes and it looks and tastes delicious. First you will need to boil six to seven potatoes and then mash it well. To this add a bit of white pepper powder and salt to taste. Also add two table spoons of corn flour powder and keep aside.
In another pan heat oil and add three finely chopped onions and cook till brown. Add one teaspoon of ginger g, garlic and green chili paste and allow it to cook. Now add the minced chicken and cook for a while. Add salt and pepper to taste. You will now need to add a bit of water so that the chicken can cook for about ten to fifteen minutes. Now add lots of grated cheese and also the juice of one lemon. Remove from gas and let it cool.
Make large flat rounds of the potatoes and make a dent in the center. Fill a bit of the minced chicken and seal the potatoes. Continue this till the chicken and potatoes are over. Heat one spoon of oil in a non stick and cook the cutlets on both sides and serve hot.
Another variation of eating this delicious chicken in potatoes is to flatten the potatoes and make a dent in the centre. Place the potatoes on a baking tray and put one or two spoons of the chicken filling on the potato. Sprinkle grated cheese over it and bake it in the oven for ten to fifteen minutes of till golden brown. Serve with chutney or tomato ketchup.
Since this is easy to eat and is not messy you can give it to the children as a snack in school. This is quite heavy to eat and can be eaten as a full meal along with some soup and garlic bread. Make extra and keep them refrigerated for a few days. This same recipe can be made with lamb instead of chicken and it tastes just as nice. If you want it slightly spicy add some Tabasco to the chicken or lamb and the whole flavour will change.
