Cold Cucumber Soup
This soup is best eaten in the summer time as it is a cold soup. It is also very easy to make and healthy to eat. Have it along with some garlic bread or a healthy sandwich and your meal is complete.
First you will need about two cucumbers. Peel and grate them. Keep this aside. Take a thick bottom pan and heat oil or butter; whatever you prefer. To this add one finely chopped onion and also the cucumber. Stir this continuously. To this you will need to add vegetable stock. You can use ready made stock cubes or you can boil four cups of water to which a few cabbage leaves and one carrot has been added. Strain this when boiled and use the water as the stock. Any extra stock can be kept frozen for a few days.
Once you add the stock allow it to cook on a slow fire.Remove from the gas after about ten minutes and allow it to cool. When cool blend in a liquidizer. To this add half a cup of chilled milk and refrigerate for a while . Serve chilled. Garnish this cold cucumber soup with mint and coriander leaves. Add salt and pepper to taste and add a few drops of lemon juice before serving. If you like you can add chopped pieces of raw cucumber to the soup just before serving it.
You will find that this soup cools your systems and is great after a hot and tiring day. The kids are always feeling hot because of the amount of activities they do through the day. This is the ideal way to cool them off. In fact give it to them in a glass and tell them it is a drink and they will not create a fuss about having it.
This soup is good for those who are on a diet and have just come back from a holiday where they have over eaten. This soup is just what your body needs to clear up your digestive system. Have it regularly through the summer and keep the heat away.
