Corn Pizza

This is a quick snack for you and your child and is rich in carbohydrates. It is a great snack to eat before a workout as well. It gives you the energy you need. You can give it to the kids for breakfast or in their snack box or as an evening snack.

Remove the corn from three corns on the cobs. You can also get the corn which is already removed and kept in packets but that is more expensive and it is not difficult to remove it from the cob. Boil it in a pressure cooker for at least six whistles. When cool strain the water and blend it with about three tablespoons of curd.

In another cooker boil one potato. Remove the skin and mix it well with the corn in another vessel. Now take some cottage cheese about three tablespoons would be fine and crumble it with your fingers into the potato and corn mixture. To this add finely chopped capsicum. Add oregano, a pinch of salt, some red chilli flakes, and a teaspoon of ketchup (optional). Lastly grate some cheese into the mixture. If you don’t have cheeses then add two spoons of plain cheese spread. Mix everything well using a spoon. It should resemble a paste or spread. You can add some curd if it is yet too thick.

Take a slice of bread and generously apply the paste on it. Bake it at one hundred and sixty degrees for ten minutes or till done. You can alternatively apply it on biscuits and eat it. Store it for up to three days in the refrigerator. You can also spread it on mini burger buns and bake or simply eat it as a sandwich.

For those who are fussy eaters or who have children who don’t eat well it is not only a quick and healthy food item but quite filling and nutritious as well. This is a great recipe for children as they get the goodness of potatoes, corn cottage cheese and cheese without a fuss. The good thing about it is once the paste is ready the one who wants to eat it can make it themselves. It becomes almost like a meal.
