Lactose is a type of sugar found in milk and milk products. Lactose intolerance is a condition where the patient’s digestive system lack the ability to digest lactose . This is because enzyme lactase which is responsible for lactose digestion will be lacking in such patients.
Such people develop symptoms such as abdominal pain, bloating, gas, diarrhea, nausea etc after consuming foods that contain lactose. Hence they need to take lactose free or dairy free recipes. Even though most of the desserts require milk certain desserts can be prepared without milk and here are some of them.
Banana Ice Cream and Toasted Coconut Bites
Sweet shredded coconut- 1 cup
Large ripe bananas- 4
Chilled and unsweetened coconut milk- 1 cup
Superfine sugar- 2 tablespoon
Lime juice- ½ of a lime
Peel and slice the bananas in to ½ inch size and keep them on cookie sheets spread with parchment paper. Freeze these slices for at least one hour so that it becomes solid. Then keep the shredded coconut on cookie sheet and bake it till it becomes golden brown with occasional tossing.
Take the frozen slices of banana from the cookies sheet and keep the cookies sheet back in the freezer. Add the slices in to a food processer and blend it till it becomes roughly chopped and then add coconut milk, sugar and lime juice. Process the entire contents together for about 2 minutes or till it reaches the consistency of ice cream.
Now get the cookie sheet back from the freezer and make small bite sized scoops of banana ice cream on the sheet and freeze it for another half an hour. Take the toasted coconut shreds in a bowl and roll each ball of banana ice cream in this toasted coconut. Thereafter keep the balls back in the tray and freeze it for another half an hour to make the ice cream ready.
Three Berry Pie
Fresh and halved strawberries- 1 cup
White sugar- ½ cup
Cornstarch- 3 tablespoon
Raspberries- 2 cups
Fresh blueberries- 1 ½ cups
Recipe pastry for 9 inch double crust pie-1
Mix cornstarch and sugar in a large bowl and to this add all the berries. Toss the entire contents very well to ensure that the berries are coated well. Use half of the pastry to line a 9 inch pie plate and transfer the entire berry mixture to the crust lined plate. Cover it with second crust and seal and fold the edges and cover the edges with foil to avoid over browning.
Bake the pie for about 25 minutes at 375 degree F and then remove the foil and bake it again for 20 to 30 minutes or till the top of the crust becomes golden in color. Cool the pie and enjoy this zero cholesterol dairy free pie.
