Delicious Creamy Soups

Soup, though usually served as a prelude to a full meal, can also be served as a snack or a meal on its own. Well, it’s a willing choice, a perfect way to begin an evening after a full day at work and no exercise.

If you’ve got guests coming over to your place for dinner there’s no better way to impress them than offering them some healthy and delicious steaming hot soups.



1. Clear Vegetable Soup

Ingredients
125 g carrots cut in thin sticks
1 onion sliced
3 sticks thinly sliced
125 g cabbage, finely shredded
2 tomatoes chopped
1 ltr vegetable stock
Salt and pepper to taste

Method

You can use stock cubes to make the stock. But, a vegetable stock made from onions and carrots, flavoured with a bay leaf and black pepper, is the right thing to do. Place stock to boil, add the carrots and simmer for 5 minutes. Add the onion and celery and let it simmer for a couple of more minutes, leaving the vegetables crisp. Add the cabbage and tomatoes, season and serve hot.

2. Creamy Chicken Soup

Ingredients

6 tbsp butter
½ cup flour
½ cup milk
½ cup light cream
3 cups chicken stock
1 cup chicken finely cubed
Salt and pepper to taste

Method

Melt butter in a saucepan. Blend in flour, add milk, cream and stock. Let it come to a boil, thicken, stir in chicken and season. Garnish with fresh mint or coriander.

3. Spinach Soup

Ingredients

250 g spinach
25 g onion chopped
3 cloves garlic chopped
1 tsp ginger paste
2 tomatoes chopped
25 g butter
½ cup fresh cream
1 tsp black pepper
2 tbsp lemon juice
Salt

Method

Wash spinach thoroughly. Saute onion, garlic, ginger, tomatoes in butter.
2. Add the spinach, 5-6 cups water, and pressure cook for 10 minutes. Cool the soup, blend and sieve. Add salt, pepper, lemon juice and swirl in the cream (optional).

Coconut Prawn Soup

Ingredients

225 g fresh prawns
1.2 ltr fish stock
4 slices galangal
4 kaffir lime leaves shredded
2 red or green chillies chopped
1 tbsp fish sauce
150 ml coconut milk
2 stalks lemon grass
Salt to taste

Method

Thinly slice the lemon grass. Peel the prawns and discard the dark vein. Heat the stock, stir in the galangal, lime leaves, lemon grass, chillies and fish sauce.
Now, add the prawns and simmer for 5 minutes. Stir in the coconut milk and do not let the soup come to a boil. Serve hot.

5. Hot And Sour Soup

Ingredients

1 tbsp oil
250 g tofu sliced
90 g mushrooms sliced
2 tbsp fresh coriander chopped
1 red chilli sliced finely

Stock

1 tbsp tamarind pulp
2 dried red chillies chopped
2 kaffir lime leaves chopped
1 inch ginger chopped
2 galangal chopped
1 stalk lemon grass
1 ltr cold water

Method

Put all the ingredients for the stock into a saucepan and bring to a boil. Simmer for 5 minutes. Remove from heat, strain, reserving the stock. Heat oil in a wok or a large frying pan and cook the tofu over high heat for about 2 minutes, stirring constantly. Add the stock. Add the mushrooms and coriander and boil for 3 minutes. Serve hot and garnish with red chilli sauce.
