Dips And Chips: Great Accompaniments With Starters

Cheese Dip

Makes one bowl

Ingredients:

1 cup hung curds (2 and a half cups of curds made from full cream milk is taken and hung in a muslin cloth for 2-3 hours)
2 tablespoon cheese spread
100gms fresh cream
1 medium onion chopped very finely
1 medium capsicum deseeded and chopped very finely
Juice of 1 lemon
Salt to taste and white pepper to taste

Method:

Beat the curd and cheese spread with an electric beater till smooth. Mix cream gently. Add all other ingredients and mix lightly. Chill it in fridge for 1 hour before serving. Serve in a small bowl with starters.

Mint Dip / Poodina Dip

Makes one bowl

Ingredients:

1 cup hung curds (2 and a half cups of curds made from full cream milk is taken and hung in a muslin cloth for 2-3 hours)
100 gms fresh cream
2 tablespoon ground mint/ poodina leaves and few drops of green colour (optional green colour)
Juice of 1 lemon
Salt to taste.

Method:

Beat the curd with an electric beater till smooth. Mix cream gently. Add grounded mint leaves, juice of lemon and salt and mix lightly. Chill it in fridge for 1 hour before serving. Serve in a small bowl with starters.

Garlic Dip

Makes one bowl

Ingredients:

1 cup hung curds (2 and a half cups of curds made from full cream milk is taken and hung in a muslin cloth for 2-3 hours)
100gms fresh cream
2 tablespoon garlic (made into paste)
1 teaspoon red chilli powder (if making it for kids do not add red chilli powder instead of red chilli you can use black pepper powder)
Juice of 1 lemon
Salt to taste

Method:

Beat the curd with an electric beater till smooth. Mix cream gently. Add grounded garlic paste to it and red chilli powder too with the salt. Mix all of them lightly Serve in a small bowl with starters.

Salmon Dip

Ingredients:

One 15 ounce can of pink salmon
8 ounce packet of fresh cream
¼ cup sour cream
¼ cup horse radish
½ teaspoon salt
1/8 teaspoon garlic paste
Romaine lettuce (nice and crisp)
Paprika
Crackers
Celery sticks

Method:

First drain the salmon and remove any skin parts if you want. Mash the bones; they are so small that once mashed you will not know that they are there.
Next beat fresh cream, sour cream, horse radish, garlic paste and salt with an electric beater till they become really smooth.

Then mix them in salmon till they get really well blended. Then take romaine lettuce leaves and arrange in a circle in a bowl which is not too deep. And pour this mixture on the leaves. Sprinkle it with paprika. Make this in advance and put it in refrigerator for chilling an hour before. Now serve with celery sticks and crackers.
