This is an ideal snack for anyone who has kids. The most amazing thing about this is that you can call it a cake or bread. The zucchini in it is very healthy and one will not even be able to tell that zucchini is what they are eating. It tastes great with a cup of tea or a glass of milk.
In a pan mix together I cup of any cooking oil, two and a quarter cups of powdered sugar, one cup of water and three capfuls of vanilla extract. Beat all this with an electric beater and keep aside. Add more water if it is too thick. It needs to be of a dropping consistency.
In another pan sift together one teaspoon of cinnamon powder one teaspoon of baking powder and one teaspoon of baking soda. To this add a pinch of salt and three and a half cups of whole wheat flour. Combine the dry ingredients with the sugar and oil mixture and once again beat well with an electric beater. All the ingredients should be well mixed. Now add the shredded zucchini (two cups). Mix with a wooden spoon. Add finely chopped walnuts (optional).
Grease a cake tin and pour the batter into it. Bake for forty five minutes at two hundred degrees Celsius. Check to see if done by inserting a knife or a toothpick into it. If it comes out clean the cake is ready. Allow it to cool for a few hours before cutting.
To remove overturn the cake tin onto a plate and it will easily come out. Cut it into squares if you are serving it as a cake. Pour come chocolate sauce over it if you like. If you are serving it as bread then cut it into thin slices.
This can be kept refrigerated for up to three days. Before eating however, warm it in the micro wave for a few seconds. You need not worry if the kids eat too much of it as it has high nutritive value. To make it more nutritious you can add almond and raisins as well.
