Eggless Cake Recipe

If you are an Hard core Vegetarian and do not even eat eggs or you are allergic to eggs, at times you must be feeling left out when people around you like your friends, family members or colleagues dig their teeth into pieces of pastries and cakes on occasions like birthdays and anniversaries.

Not any more here I am sharing a simple to make Eggless basic sponge cake. This basic cake can be relished on its own or you can turn it into a new flavor with little variation in ingredients. You can also use it as base in various desserts like cake ice-cream, chocolate brownie etc.



Ingredients

150 gms of condensed milk unsweetened
150 gms all-purpose flour, 150 gms of castor sugar
1 table soonp baking powder, 1 tble spoon soda bi carbonate,150 gms of butter and 1 table spoon of vanilla essence.

Preparation Method

Sieve the flour, baking powder and castor sugar. Blend the condensed milk, flour , castor sugar, baking powder together, slowly adding one ingredient after another. Add the vanilla essence.

If you find the batter too thick at this point add some regular milk may be 2-3 table spoons. Blend it till it turns into a smooth paste. Take the baking vessel and spray some oil on all sides, then dust away some flour.

Pour the cake batter into it. Pre heat the oven for about 10 minutes at 200 degree celcius. Bake the cake for 40 minutes at 240 degree celcius. Let the cake cool down for half an hour and then take out on a tray.

Now you eggless sponge cake is ready to be eaten. You can use this as a base to create different pastries. For pineapple pastry make two such bases, remove crust from all side. Sprinkle about 2-3 table spoon sugar syrup on the sponge cake bases.

This will make the pastry soft and bit moist. Spread pineapple flavored whipped cream all over the base and put one on top of other. Decorate it with tinned pineapple chunks and cherries on top.  Likewise you can make black forest pastry, strawberry pastry or chocolate pastry.
