Few Preparations With Chicken Liver
Chicken liver is healthy as well as tasty. It contains a lot of nutrients – vitamin A, folate, vitamin B12, protein and many more. But perhaps the most important thing that chicken livers contain is iron.
Anemic people may meet their necessary iron requirements if they eat chicken livers regularly. It is also low in fat.
Here are few preparations made of chicken liver.
Chicken Liver Curry
Ingredients:
• Chicken liver 250 grams
• 1 large potato
• 1 onion
• 10 cloves of garlic
• ½ inch ginger
• 1 big tomato
• Few sprigs of coriander leaves
• Pinch of turmeric
• Cooking oil
• water
Preparation:
Wash chicken liver properly and drain the water. Cut potato into medium cubes. Chop the tomato. Cut the liver into medium pieces. Grind onion, garlic and ginger into fine paste. Chop the coriander leaves finely.
Process:
Heat oil on a pan and fry livers and potato and add turmeric and salt. When they are fried well, keep them aside. Again pour some oil and add chopped tomato in it. Stir and fry them well till they get tender. Add garlic-onion paste and ginger paste and cook them. When the spices are well fried add potato and chicken liver in it. Stir continuously and cook them well. Add salt to taste and pinch of sugar in it. Add little water in it and keep the lid on. If you want hot taste you may add red chili flakes in the gravy. when everything gets tender and the thick gravy is ready remove it from heat. Sprinkle freshly chopped coriander leaves on it. Serve it hot with steamed rice or with bread.
Chicken Liver Fry
Wash chicken liver properly and drain the water. Cut them into big round shape. Grind onion, garlic and ginger into fine paste. Add lemon juice and salt in the paste. Marinate chicken cubes in that paste for at least two hours. Now heat some butter in a pan and fry those marinated liver in the melted butter. Fry them well and sprinkle salt to taste and pinch of sugar to get color. To get tangy taste sprinkle few drops of fresh lime and finely chopped green chili. Stir continuously. At last sprinkle a little finely chopped fresh parsley and mint over the liver. Serve them hot as snacks.
