For the vegetables you can use potatoes, green peas, French beans, carrots and cauliflower florets. Chop the vegetables, except the green peas into cubes and keep them to boil.Chop a few shallots lengthwise and keep aside.Chop a few shallots lengthwise and keep aside.
For the next step put two large onions, one large piece of ginger, five to six pods of garlic and one green chilli in a mixer and puree it. Add a few drops of water to make it in to a paste and keep it aside.
Heat oil in a pan and add the pureed paste. Fry till golden brown. Chop two tomatoes into big pieces and add to the paste. When the tomatoes become soft add the boiled vegetables and the chopped shallots. Add salt to taste, a pinch of ajinomoto, two teaspoons of sugar and half a cup of water. Allow it to simmer on a slow flame.
Keep stirring regularly. Remove from the gas when the water dries up. Put this in an oven proof dish and add some butter over it.For the white sauce take one cup cold milk mixed with some butter, cheese and one tablespoon of corn flour and cook till it thickens. Keep stirring the white sauce so that no lumps form.
Add salt and pepper to taste when it thickens and remove from gas. Pour this over the garden vegetables and sprinkle lots of cheese over it. Bake in the oven for at least twenty minutes or till the cheese turns golden brown.
This can be baked and eaten even without the white sauce.
In that case you must add some condiments like parsley, oregano and chilli flakes. This is great for the weightwatchers and health conscious people. If there is any other vegetables that you like you can add them as well and add to the nutritious value of this dish. Serve it along with some bread sticks or dinner rolls and your meal will be complete. It is definitely worth a try.
