Ingredients
2-3 skinless boneless chicken breasts
½ cup dark soy sauce
2 spoons brown sugar
2 spoons fresh ginger root grated fine
2-3 chopped green onions
2 spoons fresh garlic crushed
1 spoon corn starch
1 spoon cold water
1/4th cup cider vinegar
Salt to taste
Freshly ground black pepper
1 spoon crushed paprika flakes
2 spoons fresh lemon juice
Method
Begin making the teriyaki chicken by preparing the teriyaki sauce. For this take a sauce-pan and add to it the soy sauce, brown sugar and vinegar. Add the freshly grated ginger root and minced garlic. Next, dissolve the cornstarch in water and add it to the soy sauce mix. Also add little salt and some freshly ground black pepper.
Mix all ingredients together and let it simmer on low heat till the sauce bubbles. After this remove from stove and add the chopped green onions. Allow the teriyaki sauce to cool before using it for the recipe. If you want to make the teriyaki sauce spicier you can add Chinese hot sauce. You can also add fish sauce or oyster sauce which will make teriyaki sauce taste more flavorful.
Prepare the chicken for this dish by washing the chicken breasts under running water and then pat dry. Marinate the chicken breasts with salt, freshly ground black pepper, crushed paprika flakes and fresh lime juice. Leave the chicken marinated for 45 minutes to an hour. Pre-heat your oven to 420 degree Fahrenheit. Take the marinated chicken and place it on a baking tray. Next, brush the marinated chicken breasts on both sides with the prepared teriyaki sauce.
This will make the chicken taste more flavorful. Let the sauce coated chicken rest for some-time before you begin baking it. This will ensure that all flavors of the spicy teriyaki sauce get infused in the chicken pieces. Bake the chicken in the pre-heated oven for 30-45 minutes. During the baking process, brush the chicken with teriyaki sauce every 10-15 minutes. This will give the chicken an appealing glaze and deep brown color.
To check if the chicken is done, prick the pieces with a fork. If the juices run clear this is an indication that the chicken is cooked completely. Once done wait for 10 minutes before serving the teriyaki chicken. Serve the chicken with a side of plain rice or brown rice. Chinese-style spicy fried rice or egg noodles stir-fried with spicy Chinese hot sauce and soy sauce go very well with Teriyaki chicken.
