There are number of recipes, in Indian style, for vegetarians. But, the south Indian vegetable dish called sambar is unique in its taste and the combination of ingredients used in it. Since Sambar is an inevitable entrée, a South Indian dinner is incomplete with out it.
Normally, it is served with rice for dinner and with Dosa and Iddali in breakfasts. It is made with number of vegetables and some spicy ingredients. In Kerala and Tamil Nadu, sambar is made almost in a similar way.
But in Andra Pradesh the ingredients used in it are different. This article explains you how to cook sambar in Kerala- Thamil Nadu style (which is the prominent style). You can follow these step by step instructions and prepare a delicious sambar in your home.
Toovar Dal ½ cup
Coconut (half part)
Red chillies 5
Green Pepper (cut into pieces) 1
Ladies finger 5
Mustard Seeds 1 tsp
Tamarind Paste 1 tsp
Hing 1 Pinch
Channa dal 3 tsp
Dhania seeds 4 tsp
First, you need to wash and peel potatoes and drum sticks properly. Slice them in to medium pieces and reserve. Wash tomatoes and ladies fingers and cut them in to small pieces. Take the onions and chop them finely. Reserve all these items. After that, wash toovar dal and put it in a griddle adding 1 cup of water. You have to heat the griddle until dal is well boiled. After that, remove it from fire and keep aside allowing it to dry.
Now, heat a flat pan and add chana dal, dhania seeds, red chillies and hing to it. Fry them for some time. Then, grate the coconut and add to the pan. Keep stirring it for some time. When all these ingredients are well fried, take them out and keep aside for 5 minutes (just to allow them to get cooled). Then, put them in a grinder and grind well. You need to add enough water to this mixture while grind it. After that, Keep the paste aside.
Now, take a frying pan adding some oil to it. Add the green peppers and fry them well. Then, keep the fried peppers aside. After that, heat a griddle adding sliced tomatoes, potatoes, onions, drumsticks and ladies finger to it. Add required water, tamarind paste, and turmeric powder to the griddle. When it starts boiling, add required salt and mix them well. When the vegetables are well boiled, add the paste you made before and fried peppers to the griddle. Stir the mixture well and cook it again for six minutes.
After that, add the boiled dal and heat it. When the mixture is well cooked, remove the griddle from flame and keep it aside with out opening it. Then, heat a flat pan adding some oil and add mustard seeds along with some sliced onion pieces. Fry them well and pour it to the griddle. Then, chop the coriander leaves and add to the mixture. Stir the mixture well and transfer it to a serving plate. Your sambar is ready to be served. You can serve it with rice or dosa.
