Chicken Thighs (boneless) 8
All-Purpose Flour 2 tablespoon
Onions (large) 2
Carrots (large) 4
Eggplant 1
Olive Oil 2 tablespoon
Cranberries (dried) ½ cup
Apricots (dried) ½ cup
Chicken Broth 2 cups
Tomato Paste 2 tablespoon
Lemon Juice 2 tablespoon
Garlic Salt 2 teaspoon
Ground Cumin 1½ teaspoon
Ground Ginger 1½ teaspoon
Cinnamon 1 teaspoon
Ground Black Pepper ¾ teaspoon
Couscous 1 cup
Water 1 cup


First, in order to prepare the ingredients appropriately, wash the chicken thighs and cut them into small sized pieces (approximately one inch pieces). Then, slice the onions and carrots into thin pieces. Cut the egg plant into one inch sized cubes and keep aside all the ingredients.

Now, take a skillet and heat it in a medium flame adding olive oil to it. When the oil is ready for frying, add the chicken pieces along with the chopped eggplant. Don’t forget to stir frequently while you fry them. When the chicken pieces get lightly browned or before they get cooked thoroughly, remove the pan from heat and transfer both ingredients to a cooker.

Then, you have to sprinkle the sliced onion and carrot over the half fried chicken. Put apricot and cranberries over these ingredients also. Now, make a mixture of chicken broth, tomato paste, garlic salt, ground cumin, ground ginger, cinnamon, and ground black pepper. Add lemon juice to this mixture and blend it well.

When a fine mixture is prepared, you need to pour it over the chicken and other ingredients in the cooker. Keep it on heat and cook it for at least half an hour. You need to increase the heat into high level while you cook it.

At the same time, heat one cup of water in a griddle and, when the water gets boiled, add the couscous to it. Blend it well and cover the griddle tightly. Then, turn off the flame and keep the griddle aside for seven minutes. When the water is absorbed by couscous, you can crush it gently.

Now, take this mixture and add to the cooked chicken. Blend them well and transfer the mixture to a serving plate. Then, chop the coriander leaves and decorate the dish with it. Your chicken tagine is now ready to be served. Serve it hot as an entrée for your guests.
