Inculcating a healthy eating habit in our family is a very difficult task. This is because; most of the people have preconceived notions that healthy and nutritious food is not tasty. Beside this, all the individuals in the family have different preferences for their vegetables.
This makes the task of homemaker all the more difficult.However, mixed vegetables with almonds is a recipe which has all the green vegetables in it along with the richness of almonds. Vegetables and fruits are the best sources of adding nutrition to our diet .Mixed vegetable with almonds, not only includes various available vegetables but it also includes almonds which are very healthy for all especially kids and growing children .
Another reason for trying and making this vegetable at home, is that mostly at the week ends, our refrigerators are left with few pieces of various vegetables. None of them can be used to prepare a full dish.So; we can use this dish using all those left over vegetables. All these vegetables are great source of vitamins, proteins, nutrients and other essential nutrition required by our body. Beside this, almonds are great source of calcium.
Preparation time – 10 min
Cooking time — 15-20 min
About 15-20 pieces of blanched and peeled almonds, medium sized button mushrooms – chopped into 4 halves,8-10 small pieces of cauliflower florets , 1 Carrot sliced into one inch diamond shape, 5-8 pcs of french beans sliced into one inch diamond shape ,1 pcs green capsicum sliced into one inch diamond shape,100 gms of cottage cheese sliced into one inch diamond shape, 3-4 cloves of finely chopped garlic,1/2 inch piece finely chopped ginger pieces,2 cups of fresh vegetable stock ,1/4 tsp of white pepper powder ,2 tsp of corn flour ,1 tsp of chili oil, salt to taste, 2tsp of cooking oil.
Steps of cooking
Heat oil in a pan. When hot, add the mushrooms, ginger and garlic pieces and saute them for few minutes. Once when done, add the remaining vegetables one by one, depending upon their cooking time. Like here, add the cauliflower florets, then carrots and finally french beans. Saute the for few minutes until they become soft and tender.
Now add the fresh vegetable stock, salt and pepper .Mix them thoroughly and allow them to simmer for few more minutes. Add the diced capsicum in the above vegetables and mix them. Cook them together for few more seconds. Now add the blanched almonds (cut into two halves) to the vegetables and cook them together. If needed, add desired amount of water into it.
Add the diced cottage cheese and stir them again. Let them rest on flame for few more seconds. In a small bowl of water, add 2 tsp of corn flour and mix it thoroughly such that no lumps are formed. Add this cornstarch mixture into the vegetable and stir them again such that it dissolves thoroughly. Once when the vegetables are done, add the chili oil and close the gas stove. Serve them hot!
One can always do permutation and combination and use left over vegetables. This will not only help in providing healthy nutrients to our family but also help in bringing the variation in taste.
