½ tsp kosher salt
7 ounces all purpose flour
3 and ½ ounces vanilla sugar
4 tsp vanilla extract
1 large egg
1 tbsp whole milk
¾ tsp baking powder
Wire cooling racks
4 ounces room temperature butter
Firstly, preheat the oven to 350 degree Fahrenheit or 176.67 degree Celsius. Now place the oven racks with one in the bottom third and the other one in the top third. This permits for uniform baking. Next step is to take a bowl and sieve the baking powder, flour and salt and keep it aside.
Now take a stand mixer and place the vanilla sugar and butter in the bowl of the mixer. Mix it for 2 minutes. Now add the egg. Mix properly so that it gets combined completely. Turn off the mixer. Take a rubber spatula and scrape down the sides of the mixer. Again turn on the mixer on low and add the whole milk and vanilla. Then add the flour mixture smoothly into it. Mix well and refrigerate it for 10 minutes.
Place the parchment paper on each baking sheet. Take a teaspoon and hollow out the dough, place the mixture on the baking sheets. Bake the cookies for 15 – 20 minutes. During the cooking, after 8-10 minutes, rotate the baking sheets from the top to the bottom.

If you want to cut down the calories in this recipe, you can use margarine instead of butter. Sugar can be replaced by saccharine. All purpose flour can be replaced by whole wheat flour. If you use wheat flour, your cookies will be a bit desiccated. In order to avoid this, take out the cookies from the oven at an earlier time or increase the amount of milk slightly just to make up for the dryness due to the wheat.
