Palak paneer is a popular Indian curry that is also very healthy and nutritious. This curry uses spinach and Indian cottage cheese which makes it rich in vitamins, minerals, and proteins. Spinach is a rich source of vitamins such as Vitamin A and Vitamin C.
It also provides vital minerals such as folate, magnesium, etc. Paneer is an Indian cheese which is low in fat and high in proteins thus making it very nutritious. Very less oil is used in the preparation of this dish and hence it is low in calories too.

1 liter whole milk
1 spoon fresh lemon juice or citric acid
2-3 bunches of spinach
3-4 spoons cooking oil
1 large onion finely chopped
2 spoons freshly made garlic paste
1 spoon fresh ginger paste
2 spoons paprika powder
2 spoons coriander powder
1 spoon cumin powder
1 spoon mixed spice blend or garam masala
Salt to taste
Begin making paneer before you start making the curry. To make paneer at home, take the milk in a large pot and keep it to boil. You can use reduced-fat milk if you wish to make low-fat paneer. Once the milk begins to boil add one spoon of freshly squeezed lemon juice.
Lower the flame and keep stirring continuously to curdle the milk. Once the milk curdles, it will form chunks of paneer. Pass it through a strain to drain the water and put the freshly-made paneer in a muslin cloth. Tie the muslin cloth at the ends and hang it for 4-6 hours so that all water from the paneer drains out. After this, the paneer will be ready to be cut into chunks.
Begin making the curry by blanching spinach leaves in boiling water. Place the spinach in a pot of boiling water for 2 minutes and then immediately rinse under cold water. This will ensure that your curry has a nice green color when it is done. To make the curry, take oil in a pan and add the chopped onions. Sauté the onions till they turn slightly translucent. Ensure the onions do not burn or turn too brown.
After this, add the freshly made ginger and garlic paste and sauté it with the onion till the raw smell of the garlic and ginger disappears. After this begin adding the spices. Add the paprika powder followed by the coriander powder, cumin powder and garam masala powder. Garam masala powder is a spice blend that is commonly available at all Asian grocery outlets.
Sauté the spices very well with the onions for 3-4 minutes. After this add the pureed tomato. Let the tomato puree cook very well with the onions and spices. The gravy will leave the sides of the pan and the oil will begin to separate indicating that the gravy is cooked. Meanwhile puree the blanched spinach and add it to the onion-tomato gravy. Mix the spinach puree very well with the gravy and season with salt. After this add the paneer cubes and a little water. Let the paneer simmer in the spinach gravy for 3-4 minutes. After this, remove from flame and serve healthy palak paneer with naan bread or rice pilaf.
