Lamb Curry Recipe

Who does not like lamb because of its soft and tender meat?  There are different types of lamb preparation all over the world. Here is one such mouthwatering preparation which is easy to make, tasty to eat and healthy too.

It uses olive oil, basil, garlic and ginger. All of them have their own contribution towards good health.

For the preparation you need:-

•    500 gms  lamb
•    1 big onion
•    4 cloves of garlic
•    ½ inch ginger
•    Coconut milk 1 cup
•     parsley leaves
•    Oregano 1 teaspoon
•    Olive oil ½ cup
•    ½ teaspoon red chili flakes
•    salt

Preparation:-

Wash and clean the lamb thoroughly.  Cut them into medium size. Sprinkle two three pinches salt on the lamb pieces and mix well. Keep it aside. Grind the onion, garlic and ginger and make a fine paste.

Make a paste of parsley leaves and keep that separately. Thick coconut milk is available in the market or you can make your own coconut milk at home. Grind the flesh of one coconut until it turns to fine paste. Pour little hot water in it and strain the milk. Preserve it.

Cooking:-

In a pan pour olive oil to fry those lamb pieces. They will turn red as soon as they come in contact of heat. Sauté them well and keep aside. Now pour the remaining oil and fry the ginger, onion and garlic paste. Fry well till the raw smell is gone. Add parsley paste.

Stir well. Now pour 3/4 cup of coconut milk, sprinkle oregano and chili flakes. Add lambs and keep stirring. Put the lid on until those lambs get soft and the gravy turns thick. Before removing pan from the heat add the remaining coconut milk and another pinch of oregano. Now your lambs are ready to serve.

You can also use coarsely ground black pepper instead of red chili flakes if you like the taste and smell of pepper better than chilies. Or if you want to make it hot you can use both red chili and black pepper powder.

People who do not like the smell of coconut milk can use soy milk or milk cream. In case of milk cream add it just before taking of the flame to avoid curdling. Serve this tasty lamb preparation with hot steamed rice or fresh bread at lunch or dinner.
