This recipe discusses how to make macaroni salad. The recipe for dressing given here is the traditional one. You can be creative and customize the veggies added and the dressing to suit your family’s palate and to make the dish healthier.


1 packet macaroni pasta
2 eggs hard-boiled
2 cups mixed veggies of your choice
2 stalks of fresh celery chopped
2 spoons fresh parsley chopped
1 onion finely chopped
Salt to taste
1 spoon freshly crushed black pepper
1 cup mayonnaise
½ cup olive oil


Begin making this salad by cooking the macaroni. For this take a large pot with water and bring the water to boil. Once the water begins to boil, add the macaroni. Let the macaroni pasta cook in the boiling water for 5 minutes. The pasta must be cooked but must not become soft or mushy. Once the pasta is done, drain the water and keep the pasta aside. You add a little bit of olive oil to the cooked macaroni to prevent them from sticking.

Next prepare the veggies needed for the salad. For this, finely dice mixed veggies of your choice. Try to use varied colored veggies to make your dish more attractive. This will also make your dish more nutritive. Mixed bell peppers, peas, sweet corn, carrots, potatoes, green beans, etc are great additions to a macaroni salad. Prepare the veggies by lightly sautéing them in olive oil. The veggies must get lightly cooked but must remain crunchy.

Boil the two eggs and slice them finely and keep aside to be used later in the salad. Prepare the dressing for the salad by combining mayonnaise with chopped onions, chopped parsley, salt and crushed black pepper. Also add the chopped celery and mix all ingredients very well to form a creamy dressing.

To assemble the salad, place the boiled pasta in a large bowl. Over this add the cooked veggies and then add the diced eggs. Lastly add the prepared dressing liberally all over the salad. Mix all ingredients thoroughly to form a smooth creamy and homogenous mix. Refrigerate for an hour before you serve this salad. This salad must be served chilled.

To make this salad more exotic you can add cooked shredded chicken pieces. You can also make a light and flavorful dressing to replace the mayonnaise dressing. For this, you need to combine olive oil with red wine vinegar and season the dressing with salt, freshly ground black pepper, freshly chopped parsley and fresh minced garlic. Combine all the ingredients very well to form low calorie dressing for this salad.
