Macaroni And Cheese With A Healthy Twist

Macaroni and Cheese or “Mac and Cheese” as it is popularly known is a favorite meal entree served across the United States. This combination of cheese and pasta is loved by kids and is often served at dinner in most homes across the United States. However, pre-packaged macaroni and cheese meals that are used by many of us are not always healthy.Besides, a very important component of a balanced diet is missing in this combination – Veggies. This all-time favorite meal entree can be made easily at home with more flavor and nutrition. This article includes a “Mac and Cheese” recipe which is made healthy by the inclusion of broccoli and chicken. We are also using natural condiments to add more variety and zing to the taste of this traditional recipe.

Healthy Macaroni and Cheese Recipe



To make this recipe, we will first ready the chicken. For this, take about 2 spoons olive oil in a pan and add finely chopped shallots and some crushed garlic to it. Saute till the onions turn translucent. After this, add about half a pound of chicken breasts, cut in small pieces. To the chicken and onion mix, add salt, pepper and paprika powder. Cook till the chicken is completely done and keep aside.

The next step is to prepare the pasta with the broccoli. For this, take a large pot and boil water in it. To the boiling water, add salt and some olive oil. Now add macaroni to the boiling water and cook for 5 minutes. Add about 3 cups of broccoli florets to the boiling pasta and cook for 2-3 minutes till the broccoli gets tender. Drain the water and keep the cooked pasta and broccoli aside.

To make this sauce for this pasta dish, saute about 2 tablespoons of flour in butter till the raw smell of the flour disappears. Add about 2 cups milk gradually to the flour, whisking all the time so that no lumps are formed in the sauce. Bring to boil, adding a little salt. Once the sauce has attained the right consistency, add 2 cups of grated cheddar cheese.

To assemble, the dish in a large serving bowl, mix together the prepared chicken with the pasta and broccoli. Top the pasta with the prepared cheese sauce and mix well.Serve this healthy “Mac and cheese” with tomato soup.
