10-12 whole mushrooms
3-4 spoons olive oil
1 spoon freshly minced garlic
1 cup cream cheese
1/4th cup grated parmesan cheese
Salt to taste
2 spoons freshly ground black pepper
1 spoon paprika powder
2 spoons fresh basil finely chopped
1 spoon fresh parsley finely chopped
½ cup dried bread crumbs
To make stuffed mushrooms, first clean the mushrooms under running water and pat them dry. Cut the stems carefully so that there are cavities in the whole mushrooms into which the stuffing can be filled.Next, heat olive oil in a pan and then add the minced fresh garlic.
Sauté the garlic for a few seconds and add in the chopped mushroom stems. Sauté the mushroom stems and the garlic very well together so that all moisture from the mushroom stems evaporates. Ensure the garlic does not burn or turn brown in color. If the garlic gets over-done it can ruin the taste of the dish. Once done, keep aside to cool.
Once the mushroom stems and garlic mix has cooled transfer it to a bowl. Add the cream cheese, salt, freshly ground black pepper, paprika powder, dried bread crumbs, grated parmesan cheese and mix all ingredients very well. Next add the fresh basil leaves and chopped parsley. Mix the herbs very well with the ingredients. The stuffing for the mushrooms is ready. Pre-heat your oven to 400 degree Fahrenheit before you begin to bake the mushrooms.
To prepare the stuffed mushrooms, stuff a little of the prepared mix into the cavity of each mushroom. Prepare all the mushrooms in similar fashion. Arrange the stuffed mushrooms on a baking tray and brush them lightly with butter or olive oil.
