Millet Porridge
Millet is extremely nutritious and you can eat it as a breakfast item as well as a main meal. This is great to eat if you are ill as it is extremely nutritious. It is also very easy to make.
Heat oil in a cooker and add four to five tablespoons of millet seeds to it and cook till it becomes slightly pink, You will also begin to get a small of the millet seeds. Add lots of water and salt to taste and pressure cook it for at least twelve to fourteen whistles. Millet seeds take very long to cook. If you open the cooker and find it hard then add some water and pressure cook for a few more whistles again. Eat while hot. You can add some curd to it while you eat it. This is quite bland and tastes especially good when you are ill.
Another variation to this is to add vegetables to it. In the cooker add oil and some millet porridge and cook for five minutes. Add chopped potatoes, chopped carrot and some chopped French beans and continue to cook. Add one teaspoon of cumin and one teaspoon of coriander powder and mix well. Add salt to taste and a pinch of turmeric.
Add one grated tomato and add lots of water and pressure cook for at least twelve whistles. Serve hot. You can add some red chili powder to this; but it tastes better bland. It is extremely healthy and you can add whatever vegetables you like and omit the ones that you or the kids may not eat.
If you are in a hurry this is a good recipe to make and it is filled with healthy vegetables. If you are eating it as a breakfast item then avoid the vegetables and add some jaggery instead and eat it as sweetened porridge. The kids will love it. You can keep left overs for two days if refrigerated; just add water and heat it. This is not something to make for when you have guests over. Millet porridge is quite filling and will keep you going for quite a few hours before you feel hungry again.
