You may get boarded if you follow the same recipe of chicken every time and so also your kidsif they get the same type of preparation each time. Then try out a different chicken recipe thatis not only tasty but is also colorful and this dish is called orange chicken. This is a Chinese-American chicken recipe that is very popular nowadays and it uses dried orange zest.
If driedorange peel is difficult to get then substitute it with fresh orange zest. The dish provides a lot ofnutrients.Orange is fruit that is preferred by many and it contains beta carotenes which is a verypowerful antioxidant that protects the body from invading free radicals. Orange also containvitamin A, C,calcium, foliac acid, magnesium, potassium, thiamin, pectin etc which are essentialto carry out the different activities of the body.
Above all orange contains no saturated fats and cholesterol and is low in calories. While chicken is a good source of protein and if the internalorgans such as liver, giblet etc are avoided then the cholesterol content can be reduced to a greatextent. Chicken is also a rich source of niacin, selenium, vitamin B6, vitamin D, phosphorus,zinc etc. Hence this recipe is highly nutritious and delicious.
Cooking time-35 minutes
Skinless and boneless chicken breasts cut into 1-1/2 inch cubes- Two pounds
All-purpose flour- one and a half cups
Beaten eggs- one
Salt- quarter teaspoon
Powdered Pepper- quarter teaspoon
Oil -for frying
Water- one and a half cups
Orange juice- two tablespoons
Lemon juice- quarter cup
Rice vinegar- 1/3 cup
soy sauce- two and a half tablespoons
Grated orange zest- one tablespoon
Packed brown sugar– one cup
Minced ginger root-half teaspoon
Minced garlic- half teaspoon
Chopped green onion- two tablespoons
Red pepper flakes- quarter teaspoon
Cornstarch- three tablespoons
Water- two tablespoons
The best oil used for frying the chicken would be peanut oil as peanut oil provides the best flavorand is healthier as well.
Mix the all-purpose flour, pepper and salt in a large bowl and keep aside. Dip the chicken piecesin the beaten egg and then shake the chicken pieces in flour mixture to form a coating over thechicken and keep aside the chicken pieces for frying. Use a fork or deep fryer to fry the chicken.Heat the oil in the fryer and deep fry the chicken cubes till it attains a golden brown color.Thereafter remove the chicken cubes with a slotted spoon and drain and keep aside.
In between heat a large saucepan and add one and half cups of water, orange juice, lemon juice,soy sauce and rice vinegar to the pan. Blend the contents well with a spoon over a medium flameand then mix orange zest, brown sugar, onion, garlic and ginger with the contents in the pan andallow them to boil.
Once the orange sauce starts to boil then add quarter cup of water mixed with cornstarch to thesauce slowly with constant stirring. This helps to make the sauce thick and then pour the orangesauce over the fried chicken arranged in a serving bowl and garnish the chicken with greenonions, red pepper flakes and two large pieces of orange. Serve the chicken hot and you can seehow the aroma of the chicken attracts your family to the dining table.
