Mutton Cooked With Dried Apricots
Ingredients:
• 500 gm Cubed mutton
• 250 gm dried apricots
• 2 large onions
• ½ piece ginger
• 6 cloves garlic
• ½ teaspoon cumin seed
• Red chilies (according to taste)
• ½ teaspoon turmeric powder
• Large potatoes
• Oil
• Salt
Preparation:
Soak dried apricots in water overnight. Slice onions. Grind all other spices. Peel the potato quartered each of it.
Process:
Heat 4 tablespoon of oil and fry the onions until golden brown. Add the ground spice paste and saue for two or three minutes. Add the mutton and salt and fry again, stirring until dry. Add 4 cups of water and bring to a boil, stirring occasionally. Cover the pan with water on the lid. Simmer for about 30 minutes until the water is reduced to half the quantity.
In the meantime in another vessel cover potatoes with water, add salt and boil for two to three minutes. Remove from water and deep fry in oil, until golden. Add potatoes and soaked apricots to the half cooked mutton, and simmer for about 30 minutes until the meat is tender and the gravy thickens. If more water is required use hot water. Serve hot.This preparation can be made with chicken also.

Adding apricot also helps in digestion and this is especially important in this preparation as it is of red meat, a food item that is not very easy to digest. Fresh apricot may prove to be acidic and some people may not find it suitable but dried apricot do not create such problems.
