Pork Curry
Pork curry is a tasty preparation. It is very easy to make, just the list of the ingredients looks long.
One thing that often strikes us is the amount of calorie that we take in when consuming pork. When you take pork without separating the fat then it can contain a good amount of calories. But here you should take only the lean portions and leave out the fat as far as possible. That too will separate when you have cooked the meat properly.
Ingredients:
• 1 kg pork
• 2 large onions
• Few coriander leaves
• 4 tablespoon cooking oil
• ½ inches ginger
• 6 cloves garlic
• 1 inch cinnamon
• 4 cardamoms
• 4 cloves
• 4 peppercorns
• 1 tablespoon chili flakes
• 1 teaspoon coriander seed
• 1 teaspoon cumin seed
• ½ teaspoon turmeric powder
• 2 large potatoes
• 2 large onions
• ½ cup tamarind water/vinegar
• 1 tablespoon molasses
Preparation:
Wash pork well and keep it on a strainer to drain the water. Take a sharp knife make the cubes out of the pork. Slice onions finely and chop the coriander leaves. Peel the potato and cut them into four pieces. Grind cinnamon, cardamom, peppercorn, cloves, chili flakes, ginger, garlic, cumin and coriander seed and make a mixed spice.
Process:
Heat oil in a pan and fry the onions. Add the coriander leaves and the spice and stir continuously on a low flame. Fry them until they become brown. Add pork and fry the meat well. Add salt and 6 cups of water and bring to a boil. Simmer until half the water has dried up. Add the potatoes and cook further on a low flame, stirring occasionally for 1 to 1½ hours until the pork and potatoes get tender.
The curry should be reasonably thick, and the fat should float on top. Add tomatoes, tamarind water or vinegar and molasses and simmer further for 15-20 minutes. Serve hot with boiled white rice.
You can also make this preparation with mutton, chicken or lamb in case you fear intake of high amount of calorie and you can always avoid the floating fat.
Molasses that is used in this preparation is much nutritious than white sugar and molasses contains good amount of iron too.
