Preparations With Eggplants

Eggplant or brinjal is an excellent source of dietary fiber. It contains vitamins B1 and B6, potassium, copper, folic acid, manganese, phosphorus, niacin, folic acid and iodine. It is good for type-2 diabetes; it prevents cancer; it reduces cholesterol and many more things.

So it is very good to eat egg plant everyday. Here are a few tasty preparation of egg plant.

Baked Eggplant with Egg

Ingredients:
•    One Big Brinjal or egg plant
•    1 onion
•    ½ inch ginger
•    8-9 cloves of garlic
•    1 capsicum
•    I tomato
•    Red chili flakes
•    Black pepper
•    2 eggs
•    Coriander leaves
•    Cooking oil
•    Salt

Preparation:
First cut the egg plant into two pieces and put it on a baking tray.few drops of oil, minced garlic and coriander leaves on it. Now bake it. After taking it out of the oven, remove the pulp of egg plant and keep it in a container. Now grind onion, garlic and ginger into fine paste. Chop the tomato and capsicum and keep them separately. Grind black pepper powder. Beat eggs with salt.

Process:
Now heat little oil in pan, add the beaten eggs and stir continuously like doing scrambled eggs. When they are fried well remove the scrambled eggs from the pan. Again pour oil and fry ginger-garlic-onion paste very well. Add tomato and stir continuously.

When the tomato pieces have almost melted away add the egg plant pulp in the pan, add chili  flakes and salt . Mix all these things well and keep the lid on for five minutes. Before removing it add fried eggs and pinch of black pepper powder. Garnish it with freshly chopped coriander. Serve it hot with bread.

Fried Egg Plant

Slice egg plants into thin rings. Wash properly, drain the water and rub salt and pinch of sugar. Make a batter of corn-flour and eggs. The batter should be thick. Now heat enough oil in a pan for deep frying. Dip the eggplant into batter and deep fry in very hot oil.

Complete frying all the pieces. Fry them again for the second time to make them crispy. Serve it hot with tea or coffee. The fried eggplants make a very tasty snack.
