FRIED RICE WITH SHRIMP AND PORK
Ingredients
Fresh or frozen peas 1 cup
Peanut oil 3 tbsp
Onion roughly chopped 1 medium
Red bell pepper 1 pc
Small peeled shrimps 200 gm
Diced roast pork 200 gm
Minced garlic 1 tbsp
Minced fresh ginger 1 tbsp
Long grain cooked rice 4 cups
Lightly beaten eggs 2 pc
Rice wine 4th cup
Soy sauce 2 tbsp
Dark sesame oil 1 tbsp
Salt and pepper to taste
Fresh cilantro 1/4th
Method
Take a large skillet and put 1 tbsp of oil over high heat. When hot, add the onion and bell pepper and cook stirring continuously. Cook for 10 min or until they are brown and soft. Lower the heat at this point. Transfer them to a bowl with the help of a spoon.
Now add the shrimp and cook over high heat until they turn pink. Add the pork and brown lightly for about 3 min. add to the bowl with the help of vegetables. Add the peas to the skillet and cook for about a min. Add them to the bowl. Put the remaining oil, garlic and ginger in the skillet. After about ½ a min add the rice carefully so that no lumps are formed. When you have added all the rice make a hole in the center and beat the eggs into it. Now add the meat and vegetables into the pan and mix them well while stirring. Add the rice wine and cook for a further 1 min. add the soy sauce and sesame oil. Taste a little bit and salt and pepper, if necessary. Turn of the heat, add the cilantro and serve.
OVEN FRIED CHICKEN
Ingredients
Buttermilk 1 cup
Cayenne ½ tsp
Salt 1 ½ tsp
Chicken 2 kg
Bread crumbs 2 cups
Neutral oil as needed
Method
Heat the oven to 210 C. Mix the buttermilk, cayenne and salt in a large bowl. Add the chicken and let it soak for a few min. Put the bread crumbs on a plate and brush a baking sheet with the oil. Remove the chicken parts from the bowl a piece at a time and coat it with bread crumbs. Press the chicken into the bread crumbs so that it sticks properly. Put the coated chicken on the oiled baking sheet leaving a spece between the pieces. Bake the chicken until the outer portion is golden brown and the chicken is fully prepared. This will take around 40 min max. Serve immediately.
