Rice and Eggs With A Spanish Twist

Your simple rice can be made much more healthy and tasty. Try and get your children to eat some eggs and rice, and they will simply cringe at it’s sight. This simple recipe can be made to look delightful, and when eaten, will leave your whole family asking for more. You can even serve this when you have guests at home. It requires little preparation, and can be made in a short time.

To start with, you need a fairly large saucepan which must be placed over heat. Put in about two tablespoons of oil and let it get hot. To this, half a pound of onions which have been peeled and sliced very finely. Fry very gently for about seven to ten minutes. The onions must get gentle, but make sure that they do not brown. When the onions have been fried for about two minutes, add one green pepper which has been sliced finely and de seeded. Let the onions and green pepper fry together.

Now add four ounces of long grain rice to the onions, and stir till the rice has been coated with oil. You must be very careful to only turn it very gently, or the rice could start to break if it is handled with rough hands. Now add about one can of tomatoes, a quarter pint of water, salt to taste and one bay leaf.

Once these have been added, reduce the heat and cover the pan with a lid. Simmer four about fifteen to twenty minutes, making sure that all the liquid has been absorbed.

While your rice is cooking, boil four large eggs separately. Make sure the eggs are boiled hard, and then shell the eggs, and then cut then into quarters.

Before you bring the rice to the table, spoon it into the serving dish, and arrange the egg quarters on top of the rice around the rim of the vessel. It is a little difficult to reheat the rice over before you serve it. This is one dish which must only be made about half an hour before the meal, although vegetables can be cut and the rice can be soaked before hand. You can also boil the eggs earlier.
