Shrimp Salad Stuffed Potato Skins
Preparation Time: 25 minutes
Cooking Time: 45 minutes
Total Time: 1 hour, 10 minutes
Young potatoes (12)
Duo cups of baby shrimps
One-quarter of a cup mayonnaise
Spring onion (2), thinly diced
Half a cup of Leeks, thinly diced
Grounded black pepper, salt for seasoning
Dry mustard (1 tablespoon mixed with 1 teaspoon water)
White wine vinegar (1 teaspoon)
Dash of sugar
Paprika (1 teaspoon)
Commence by pre-heating oven to 400 degree Fahrenheit. After having scrubbed, rinsed and patted dry the potatoes make tiny perforations on them by forking them. They are to be baked for approximately 45 minutes (as per size) or till the exterior casings have crisped and inners have softened.
Now, take out the spuds from the oven and after they have cooled down, cut them into equal halves and gouge out the soft cores with a sharp tablespoon into another vessel for later use. The potato skins are to be then deep-fried in scalding vegetable oil till they’ve browned and turned crisp.
In another pan, take a dollop of butter and fry the baby shrimps for a minute. Add a dash of paprika, dash of lemon, salt and transfer immediately into another bowl. With a ladle properly combine the baby shrimps, leeks, spring onions, white wine vinegar, mustard, sugar and mayonnaise in a bowl. Add pepper and salt in accordance to taste. Now fill the potato jackets with this mix ready to be dished out.
