Who says vegetarians have no choice when it comes to eating? Well, that is so not right. All you need to know is how to make a dish interesting to prove such people wrong. Here’s one such example of a rich mouth watering brinjal recipe that is sure to win a vegetarians heart, whether or not you like brinjal.
Small size brinjals – 8
Finely chopped onions – 2 medium size
Tamarind – 4 pieces
Ginger paste – ½ tsp
Garlic paste – ½ tsp
Grated dry coconut – ¼ cup
Curry leaves – 8
Turmeric powder – ¼ tsp
Red chilli powder – 1 ½ tsp
Mustard seeds – ½ tsp
Sesame seeds – 1 tsp
Cumin seeds – ½ tsp
Coriander seeds – 1 tsp
Grated peanuts – 1 tbsp
Chopped coriander leaves – 2 tbsp
Salt to taste
Oil – 3 tsp
Wash and slit brinjals into four sides, keeping the stems intact. Now, soak tamarind in some warm water for half an hour. Then, remove the pulp, strain and keep aside Reserve 1 tbsp, each of the scraped coconut and chopped coriander leaves for garnishing
Heat 1 tbsp oil in a pan and add onions to it. Fry until it turns light golden Add grated dry coconut, sesame seeds, grated peanuts, cumin seeds and coriander seeds. Saute on medium heat for two minutes until the coconut turns light golden Now, keep the mixture aside.
Once it’s cool, grind it to a coarse paste by adding some water Then, add salt, turmeric powder, red chilli powder, fresh scraped coconut, chopped coriander leaves and tamarind pulp to this paste and stuff this prepared mixture in the slit brinjals
Heat the remaining oil in a pan and add mustard seeds to it. When it splutters add curry leaves and gently place the stuffed brinjals in the pan Cook for two to three minutes by gently turning the brinjals once or twice to ensure even cooking Add a cup of water and cover the pan with a lid. Let it cook for about ten minutes on low flame until the gravy comes to a boil Serve hot, garnished with reserved coriander leaves.
Brinjal has more of vitamin A and helps in reducing the formation of gas. It’s also said to be the best eatable for curing insomnia and it’s not at all weight gaining. So you need not worry about your weight while eating this dish.
