Three Yummy Vegetable Soup Recipes

Soups are called elixir of life which rejuvenates you in a very short time. it is a liquid substance which is very easy to digest. Here are two simple recipes of soup.

Lentil Soup:

Ingredient:
Lentil 200 grams
1 large carrot
1 large onion
2-3 cloves of garlic
3 mugs chicken stock
Salt
Parsley
Black pepper powder
Olive oil

Preparation:

Soak lentil in a bowl of water for at least an hour or two. Then peel the carrot and cut them into small cubes. Chop onion into small pieces and mince the garlic. Chop parsley and keep them aside.

Process:

Heat 1 tablespoon of olive oil in a pan. Add carrot and chopped onion and in it. Stir well. Add minced garlic and again stir. Add salt and soaked lentils. Stir continuously to mix all those things well.

Remove in from pan and grind these entire things in a grinder into fine paste. Mix that lentil paste with chicken stock and boil. Before removing it from oven add chopped parsley in it.  Serve the soup hot with bread stick or cheese straw. Do not forget to sprinkle black pepper powder over the soup before serving.

Green Spinach Corn Soup

Ingredient:

500 grams spinach leaves
200 grams baby corn seed
1 onion
3-4 cloves of garlic
Butter
Salt
Black pepper powder
2-3 cups Chicken stock
Mozzarella cheese
Coriander leaves

Preparation:

Take only the fresh green leaves of spinach. Wash them first and then chop them roughly. Chop onion and make the fine paste of garlic. Grate cheese and chop fresh coriander leaves.

Process:

In a pan melt 2 table spoon of butter. Add chopped onion and garlic paste and stir well to mix everything. Add spinach and salt to taste. Stir well.  Take all these things and grind them into fine paste.

Now in the pan add 1 teaspoon of butter and add baby corn seeds. Add the spinach paste and chicken stock in it. Mix everything very well. Boil it till the baby corn seeds get soft.

Baby corn seeds are very soft and do not take much time to become tender. Sprinkle chopped coriander after removing the soup from the heat. Serve it hot and while serving sprinkle grated cheese and black pepper powder for extra flavor and taste.

Mushroom Soup

Ingredient:

500 grams button mushroom
3-4 baby corn
2-3 cloves of garlic
Carrot
Spring onion
Butter
Chicken stock
Black pepper seed

Preparation:

Cut mushrooms into four pieces. Peel carrot and cut them into fine slices. Crush garlic. Crush black pepper seed into fine powder. Chop spring onion very finely. Remove seeds of baby corn.

Process:

In a container boil mushroom, baby corn seed and carrot in a very little amount of water till they get tender. Then in a container melt a tablespoon of butter. Fry crushed garlic in it. Add boiled vegetables and stir.

Add 2-3 mugs of chicken stock and add salt to taste. Sprinkle chopped spring onion in it. Cook all the vegetables in the chicken stock for further 2-3 minutes. Remove it from heat and serve hot. While serving, sprinkle black pepper powder over soup.
