Summers are the perfect time to enjoy the outdoors. Most families use the sunny and warm weather to enjoy outdoor activities in nature’s lap. However, eating wholesome when on a picnic is something that not many of us do. Generally chips, soda drinks, cookies and such unhealthy items are preferred by most when in the outdoors.

It is indeed possible to enjoy nutritious meals when on a picnic. You need to do some pre-planning and know about packing food rightly to ensure that you and your family can get the goodness of delicious home-cooked while you indulge in your favorite outdoor activities. This article discusses recipe ideas that are perfect to carry along on a family picnic.

Potato and Egg Salad:

This salad makes a wholesome meal itself as it includes carbohydrates from potatoes, proteins and vitamins from eggs and added vitamins and nutrients from veggies.

To make this salad, boil potatoes and roughly chop them into medium pieces. In a mixing bowl, take the boiled potatoes along with hard-boiled that have been cut into halves. To this add, cherry tomatoes, fresh olives, boiled corn and mix well.

To make the dressing for this salad, combine about 4 tablespoons of olive oil with a little lemon juice.

Add salt and pepper to mix. Add freshly chopped basil and little chopped green onions to the dressing. Mix all ingredients well.

Since we are packing this salad for a picnic, it is recommended that you pack the egg-potato mix and the dressing separately. Pour the dressing over the salad right before serving at the picnic. This will prevent the salad from becoming soggy and also facilitate ease of carrying.

Tuna and Veggie Sandwich:

This healthy sandwich makes for a satisfying meal and is a great hit with kids as well as adults. It is easy to pack and is not too messy to eat, which makes it a perfect picnic meal.

To make this salad take a can of tinned tuna and drain all the liquid. Gently mash the tuna pieces to obtain a semi-smooth texture. Add freshly chopped parsley, a teaspoon of lemon juice, salt and pepper to the tuna and mix all the ingredients well.

You can carry the sandwich breads and the tuna fillings separately and assemble the sandwich at the picnic spot. Use cucumbers, tomatoes and lettuce on the bread before you fill it with the tuna stuffing.
