Gourmet Stuffing Cookies
As you sink into the goodness of these cookies you’ll be floored with its delectable filling of added cherries,nuts, raisins,prunes and melted assorted chips for that extra dimension of texture and taste.

Total Time- 1 hour, 10 minutes
Serves- 24
Ingredients for Filling
Raisins (450 grams)
Pitted prunes (400 grams)
Walnuts, chopped (50 grams)
Maraschino cherries, chopped (10-12)
Dark brown sugar, packed firmly (100 grams)
Freshly shred orange zest (duo tablespoons)
Mini chips of chocolate, peanut butter and butterscotch (2 tablespoons)
A shot of brandy or rum extract (optional)
Ingredients for Dough
Flour, all-purpose (720 grams)
Sodium bicarbonate (three teaspoons)
White Sugar (225 grams)
Salt (a teaspoon)
Egg (three)
Whole Milk (237 millilitres)
Canola oil (one cup)
Procedure
The prunes must be boiled till they have plumped up and then chop them up once cooled down. The raisins are now heated after covering them with water in a saucepan till the steam makes them swell up in size. The brown sugar and orange zest must be stirred in with the raisins after straining off the water and then re-heated till nearly dried up.
Take the vessel off the flame and place aside. Finally, combine the chopped prunes, raisins, walnuts and cherries together and let the filling mix cool down prior to refrigerating it overnight. We now proceed with the dough preparation by combining the all-purpose flour, white sugar, sodium bicarbonate and salt in a large-sized bowl.

Whole milk, canola oil and eggs must then be added after making a concave depression in the center of the dry ingredients mix and kneaded properly to form a dough that can be easily rolled. The dough must be rested under refrigeration for a period of time. The dough can optionally be prepared in a mixer equipped with a dough hook.
Once you are set to prepare the cookies then dust some flour on your hands and the working surface for better handling and rolling the dough on it till it is around one-fourth inch thick. Use a 2.5 inches round cookie cutter or the rim of a tall glass to cut out cookie shapes.
Place one of the discs on the floured working surface and place around half tablespoon of the filling mix along with one teaspoon of assorted chips in the center of it and then top it off with another roundel of cookie dough and then manually pinch the corners together. The edges can now be gently pressed with a flour-covered fork for sealing them.
The cookies must be arranged on a baking tray spaced around two inches away and baked in a preheated oven set at 350 degrees Fahrenheit till the time they develop a nice medium-brown to golden-brownish colour, for around fifteen to eighteen minutes and then set aside for cooling.
The cookies come out beautifully with the crust being quite savory, crumbly yet soft with the core being the real treat with all the crunchiness from the nuts and the spectacular taste due to the remnant ingredients.
The best way to keep the cookies is by layering them intermittently between parchment paper or wax paper in air-tight containers and last for around four days.
