Yummy Veggie Frittatas

We all know veggies are good for health, don’t we? But unless the dish looks nice and interesting not everyone enjoys eating it. So here’s an interesting yummy appetizer with some tasty ingredients. Ingredients



Slices of thick zucchini – 10
Red and yellow capsicums sliced – 1 each
Onion finely chopped – 1 or 2 small
Eggs – 2
Egg substitute – 1/2 cup
Condensed milk – ½ cup
Freshly ground black pepper – ½ tsp
Oregano leaves – 1 tsp
Shredded Cheddar (low fat) – 1/2 cup
Olive oil – 1 tsp
Salt to taste

Method

Place 8 to 10 muffin cups in a tray and with your fingertips rub some oil in each of these muffin cups. Now, preheat your oven to about 350°F.

Add a zucchini slice to the bottom of each muffin cup and top zucchini slices with the sliced capsicum and chopped onion. Make sure you evenly distribute them in all the cups.

Now, take a glass bowl and beat eggs, egg substitute, salt, pepper, milk and oregano until completely blended. With a spoon put 2 tbsp of the egg mixture into each of the muffin cups and sprinkle some cheddar evenly over the top of the cups.

Bake the muffin cups for about 10 – 15 minutes in the oven, until the frittatas are well set.

Now, with the help of a rubber scraper, remove the frittatas from the pan and serve them hot.
